  • 3 pounds of chicken thighs, bone-in and skin-on
  • 2 teaspoons of kosher salt
  • 1 teaspoon of black pepper
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of garlic powder
  • 1/2 cup of unsalted butter (1 stick), sliced into pads
  • 4 cloves garlic, minced
  • 1/4 cup of chicken broth, preferably homemade
  • 1/4 cup of heavy cream
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of chopped parsley for garnish
  • 1 tablespoon cornstarch (if needed for thickening)

Instructions

  1. Begin by generously seasoning the chicken thighs with kosher salt, black pepper, paprika, and garlic powder. Ensure each piece is thoroughly coated with the seasoning blend.
  2. If time permits and for added depth of flavor, consider browning the seasoned chicken thighs before placing them in the slow cooker. This step is optional but highly recommended.
  3. Layer the seasoned chicken thighs evenly at the bottom of the slow cooker.
  4. Dot the chicken with pads of unsalted butter and sprinkle minced garlic over the top, distributing them evenly across the chicken.
  5. Gently pour the chicken broth around the chicken, taking care not to wash off the seasonings.
  6. Set your slow cooker to low and let the magic happen. Allow the chicken to cook for 6-8 hours on low or 3-4 hours on high until it reaches a state of sublime tenderness, almost falling off the bone.
  7. About 15 minutes before serving, stir in the heavy cream and shredded cheddar cheese, allowing them to meld into a luscious sauce that envelops the chicken in creamy goodness.
  8. If you prefer a thicker sauce, create a slurry by mixing cornstarch with a bit of water, then stir it into the slow cooker. Allow the sauce to simmer and thicken for a few extra minutes.
  9. Just before serving, garnish the dish with a generous sprinkle of freshly chopped parsley. Not only does it add a vibrant pop of color, but it also imparts a refreshing herbal aroma that enhances the overall dining experience.
