Ingredients

  • 1 pound (454g) beef sirloin, sliced thin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons oil
  • 8 ounces (227g) mushrooms, sliced
  • 1 onion, sliced
  • 2 garlic cloves
  • 1 tablespoon flour
  • 1 1/2 cups (360ml) beef broth
  • 1 tablespoon Worcestershire
  • 3/4 cup (180g) sour cream
  • 12 ounces egg noodles
  • Parsley, for serving

Instructions

  1. Boil egg noodles. Season beef. Sear in oil in batches so it browns. Remove.
  2. Cook mushrooms and onion in the same pan until the mushrooms brown. Add garlic 30 seconds.
  3. Stir in flour, then broth and Worcestershire. Simmer 3 minutes until slightly thick.
  4. Off a hard boil, stir in sour cream and return the beef just to warm. Serve over noodles with parsley.

Notes

Sirloin or ribeye stays tender because the cook is short. Stew meat wants a braise, not this pan.
