Description

Fried Catfish. From Your Daily Hit.

Ingredients

Scale
  • 4 catfish fillets
  • 1 cup (140g) cornmeal
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne
  • 1/2 cup (120ml) buttermilk
  • oil for frying
  • lemon wedges

Instructions

  1. Soak the fillets in buttermilk for 10 minutes.
  2. Mix cornmeal, salt, paprika, and cayenne. Coat the fish.
  3. Fry at 350°F (175°C) for 3 to 4 minutes a side, until the crust is deep gold and the fish flakes.

Notes

Buttermilk helps the cornmeal stick. A dry fillet sheds it.
