Rice
Leftover rice is ideal. Fresh rice works if it has cooled a little.
Chicken
Cooked. A rotisserie bird is enough.
Sauce
Tomato sauce, not salsa, so the rice does not go watery.
Cheese
On top, and a little inside so the middle is not dry.
