- 1 lb sausage kielbasa, cut ¼” thick then each piece quartered
- 3 large potatoes, peeled and diced into ½” cubes
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 tsp Slap Ya Mama® seasoning, or similar Cajun seasoning
- 1 tsp pepper
- 1 cup chicken broth
- 1 cup heavy cream
- 10.5 oz can cheddar cheese soup (using half a can)
- 1 cup sharp cheddar cheese, shredded
- ½ cup water, plus more if needed, added ⅛ cup at a time
Instructions
- Preparation: Begin by preheating your oven to 350°F (175°C) and lightly greasing a 13 x 9 baking dish or a 3-quart baking dish with non-stick cooking spray. Set aside.
- Cook the Sausage: In a Dutch oven or large stockpot, add the cut sausages and about ½ cup of water. Cook over medium heat until the water evaporates and the sausage starts to brown. If needed, add more water, ⅛ of a cup at a time.
- Sauté the Vegetables: Once the sausage has browned, add the diced onions and cook for 3-4 minutes before adding the minced garlic. Continue to cook until the onions are translucent.
- Add Potatoes and Liquids: To the pot, add the diced potatoes, chicken broth, heavy cream, half can of cheddar cheese soup, Slap Ya Mama® seasoning, and pepper. Stir well to combine.
- Cook the Mixture: Over low heat, bring the mixture to a gentle boil, then turn off the heat. Add the shredded sharp cheddar cheese to the pot and mix well.
- Bake: Transfer the mixture into the prepared baking dish. Sprinkle additional cheddar cheese on top if desired. Cover with foil and bake for 65-75 minutes or until the potatoes are tender.
- Final Touch: Remove the foil and place the dish back in the oven for an additional 10 minutes to achieve a beautifully melted cheese top.
