Description

Swiss Steak. From Your Daily Hit.

Ingredients

Scale
  • 1 1/2 pounds (680g) beef round, cut in portions
  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons oil
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup (240ml) beef broth
  • 1 teaspoon Worcestershire

Instructions

  1. Heat the oven to 325°F (165°C). Dredge the beef in flour, salt, and pepper. Brown it in oil.
  2. Cook the onion and pepper in the same pot. Add tomatoes, broth, and Worcestershire.
  3. Return the beef, cover, and bake 1 1/2 hours, until a fork meets no resistance.

Notes

This is a braise. A short bake leaves the round chewy.

Cut

Round or chuck. A tender steak will dry out in this time.

Flour

A light dredge thickens the gravy.

Cover

A tight lid. Uncovered, the tomato cooks down too far.

Fork

It is done when the meat splits, not when the clock hits.

Nutrition (estimated)

About 320 calories per serving. Estimate only, not a lab test.
