Ingredients

Scale
  • 3 pounds (1.4kg) corned beef brisket, with its spice packet
  • 1 onion, quartered
  • 4 potatoes, halved
  • 4 carrots, cut in chunks
  • 1 small cabbage, wedged
  • water

Instructions

  1. Put the beef, spice packet, and onion in a pot and cover with water. Simmer 2 1/2 hours, until a fork slides in.
  2. Add potatoes and carrots and simmer 20 minutes.
  3. Add the cabbage and simmer 15 minutes. Rest the beef 10 minutes and slice across the grain.

Notes

The beef takes the time. The vegetables go in at the end so they do not dissolve.
