Steak

Cube steak is already tenderized. A thick steak stays tough.

Oil

Shallow, not a deep fryer.

Gravy

Milk, pepper, and the pan fat. It should coat a spoon.

Rest

One minute on a rack so the crust stays crisp under the gravy.

Nutrition (estimated)

About 320 calories per serving. Estimate only, not a lab test.

FAQ

Oven?

You can finish them at 350°F if the crust browns first. The fry is what makes the crust.

Gluten free?

This crust is wheat flour.

Storage

Fridge, 2 days. The crust softens. Re-crisp in a skillet before the gravy.

Pepper

A full teaspoon. A shy gravy tastes like plain milk.
