Ingredients

  • 12 lasagna noodles
  • 1 pound (454g) ground beef
  • 1/2 pound (227g) Italian sausage, casings removed
  • 1 onion, diced; 3 garlic cloves
  • 1 jar (24 ounces / 680g) marinara plus 1 can (15 ounces / 425g) tomato sauce
  • 1 teaspoon Italian seasoning, 1 teaspoon kosher salt, 1/2 teaspoon pepper
  • 15 ounces (425g) ricotta
  • 1 egg
  • 1/2 cup (50g) grated Parmesan, divided
  • 3 cups (339g) shredded mozzarella, divided

Instructions

  1. Heat the oven to 375°F (190°C). Boil noodles until flexible. Drain.
  2. Brown beef and sausage. Add onion 4 minutes, garlic 30 seconds. Stir in marinara, tomato sauce, seasoning, salt, and pepper. Simmer 10 minutes.
  3. Mix ricotta, egg, 1/4 cup Parmesan, and 1 cup mozzarella.
  4. In a 9×13, layer sauce, noodles, ricotta, mozzarella. Repeat, ending with sauce and remaining mozzarella and Parmesan.
  5. Cover with foil (tent so cheese does not stick). Bake 30 minutes. Uncover 15 minutes until browned. Rest 15 minutes.

Notes

No-boil noodles work if you add 1/2 cup water around the edges. Resting is how it slices.

Substitutions

All beef if you skip sausage. Cottage cheese blended smooth can replace ricotta.

Mistakes to avoid

Do not skip the rest. Do not drown the pan in extra sauce or it slumps.

Vegetarian?
