  • 1/3 cup (42g) all-purpose flour
  • 1 3/4 cups (420ml) chicken broth
  • 2/3 cup (160ml) milk
  • 3 cups (about 400g) cooked shredded chicken
  • 1 cup (150g) frozen peas
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 egg beaten with 1 tablespoon water

Instructions

  1. Heat the oven to 425°F (220°C). Fit one crust into a 9-inch pie dish.
  2. Melt butter in a saucepan. Cook onion, carrot, and celery 6 minutes. Sprinkle flour; cook 1 minute. Whisk in broth and milk until thick, 4 to 5 minutes. Stir in chicken, peas, salt, pepper, and thyme.
  3. Pour into the crust. Top with the second crust. Seal and vent. Brush with egg wash.
  4. Bake 30 to 38 minutes until the crust is deep golden and the filling bubbles. Rest 15 minutes before slicing.
