Description

Chicken marsala with mushrooms. From Your Daily Hit.

Ingredients

Scale
  • 4 chicken cutlets
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup (31g) flour
  • 2 tablespoons oil
  • 8 ounces (227g) mushrooms, sliced
  • 2 garlic cloves
  • 3/4 cup (180ml) dry Marsala wine
  • 1/2 cup (120ml) chicken broth
  • 2 tablespoons butter
  • Parsley

Instructions

  1. Season cutlets and dredge lightly in flour. Sear in oil 3 minutes per side until golden. Rest them on a plate.
  2. Cook mushrooms in the same pan until browned. Add garlic 30 seconds.
  3. Pour in Marsala and broth. Simmer 3 minutes until slightly thick.
  4. Return chicken. Swirl in butter. Sprinkle parsley and serve.

Notes

Dry Marsala, not the sweet dessert bottle if you can help it. Sweet Marsala makes a heavier sauce. A dry white wine is the fallback.

Wine pan, not a cream pasta

Alfredo is cream and parmesan. This sauce is wine and mushrooms.

Substitutions

Dry sherry is closer than grape juice. Add a teaspoon of sugar only if the wine is harsh.

Mistakes to avoid

A thick flour coat turns gummy. A light dust is enough.

Storage

Refrigerate 3 days. The sauce tightens. Loosen with broth.

FAQ

What is Marsala?

A fortified wine from Sicily. Dry is the cooking bottle for this sauce.

No wine?

Broth plus a teaspoon of balsamic is a weaker stand-in. The dish is built on the wine.

Cutlets or breasts?

Cutlets cook evenly. Pound thick breasts to about 1/2 inch.

What do I serve it with?

Egg noodles or a plain potato. The sauce is the point.
