Description

Hoppin John. From Your Daily Hit.

Ingredients

Scale
  • 1 pound (450g) dried black-eyed peas, soaked
  • 6 cups (1.4L) water
  • 4 ounces (113g) smoked turkey, chopped
  • 1 onion, chopped
  • 2 garlic cloves
  • 1 teaspoon salt
  • 1/2 teaspoon thyme
  • 3 cups cooked rice

Instructions

  1. Simmer peas, water, turkey, onion, garlic, and thyme until the peas are tender, about 60 to 75 minutes.
  2. Salt the pot.
  3. Stir in the rice and heat through.
  4. Rest 5 minutes, then serve.

Notes

Dried peas need a soak or a long simmer. Canned peas only need to be heated with the seasonings and will not taste the same.

Peas

Soaked overnight they cook more evenly.

Smoke

Turkey or a hock. Unsmoked meat leaves the pot flat.

Rice

Folded in, not boiled to a porridge.

Broth

The pea liquid is part of the dish. Do not drain it all away.
