Ingredients
- 2 tablespoons oil or butter
- 1 onion, diced
- 3 carrots, sliced
- 3 celery ribs, sliced
- 3 garlic cloves
- 8 cups (1.9L) chicken broth
- 1 bay leaf
- 1 teaspoon thyme
- 1 1/2 pounds (680g) bone-in chicken thighs or a small whole chicken
- 6 ounces (170g) egg noodles
- Salt, pepper, parsley
Instructions
- Cook onion, carrot, and celery in oil 6 minutes. Add garlic 30 seconds.
- Add broth, bay, thyme, and chicken. Simmer 25 minutes until the chicken is cooked.
- Remove the chicken. Shred the meat and discard skin and bones.
- Boil the noodles in the soup until tender. Return the meat. Season and finish with parsley.

Add noodles only to the portion you will eat today. They drink the broth overnight.
