Notes
Lamb is the older shepherd’s pie. Beef is the cottage-pie cousin and is listed here because US searches use both names for this bake.

Potato top, not a pastry lid
Chicken pot pie wears a crust. This one wears mash.
Substitutions
Beef instead of lamb is fine. A spoon of grated cheddar on the potatoes browns well.
Mistakes to avoid
A watery filling soaks the potatoes. Simmer until the gravy is thick.
Storage
Refrigerate 4 days. Freeze before baking if you want, then bake from cold a bit longer.

FAQ
Lamb or beef?
Both are written into this method. Lamb is traditional. Beef is the common US pan.
Can I use leftover mash?
Yes. Loosen it with a little milk so it spreads.
Why call it shepherd’s pie?
Shepherds kept sheep, so lamb is the strict name. The potato-topped bake is what this search means.
Do I have to bake it?
A few minutes under the broiler is enough if the filling is already hot.
