Custard
A short dip. A long soak makes a wet center that never sets.
Butter
Medium heat. Hot butter blacks the cinnamon before the egg cooks.
Bread
Slightly dry. Brioche or challah if you have it.
Batch
Do not crowd the pan. Steam softens the crust.

FAQ
Thick or thin bread?
A sturdy slice, about 3/4 inch. Thin sandwich bread gets soggy.
Syrup?
Maple, at the table. The custard is already sweetened a little.
Oven?
Hold cooked slices on a rack in a 250°F oven while you finish the batch.
Stuffed?
This is plain cinnamon toast. A cream-cheese stuffing is a different recipe.
