Description

Salisbury Steak. From Your Daily Hit.

Ingredients

Scale
  • 1 pound (450g) ground beef
  • 1/4 cup (20g) breadcrumbs
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 onion, sliced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups (480ml) beef broth
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Mix beef, breadcrumbs, egg, salt, and pepper. Shape 4 oval patties.
  2. Brown the patties in a skillet, about 3 minutes per side. Set them aside.
  3. Cook the onion in the butter until soft. Stir in the flour, then the broth and Worcestershire.
  4. Return the patties and simmer 12 minutes, until cooked through and the gravy is thick.

Notes

A little breadcrumb in the patty keeps it tender. All meat and no binder falls apart in the gravy.

Patties

Oval, not thick burgers. They need to simmer in the gravy.

Brown

Color on the patty flavors the gravy. Do not skip it.

Onion

Sliced, cooked soft. Raw onion in the gravy stays sharp.

Simmer

A low bubble. A hard boil breaks the patties.

Meatloaf mix?

Beef and pork together works. This version is beef.

No Worcestershire?

A teaspoon of soy sauce is the salty stand-in.

Gravy too thin?

Simmer uncovered a few minutes, or mash a pinch of flour with butter and whisk it in.

What do I serve it with?

Mashed potatoes. The gravy is the point.
