Description

Beef stroganoff with mushrooms and sour cream. From Your Daily Hit.

Ingredients

Scale
  • 1 pound (454g) beef sirloin, sliced thin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons oil
  • 8 ounces (227g) mushrooms, sliced
  • 1 onion, sliced
  • 2 garlic cloves
  • 1 tablespoon flour
  • 1 1/2 cups (360ml) beef broth
  • 1 tablespoon Worcestershire
  • 3/4 cup (180g) sour cream
  • 12 ounces egg noodles
  • Parsley, for serving

Instructions

  1. Boil egg noodles. Season beef. Sear in oil in batches so it browns. Remove.
  2. Cook mushrooms and onion in the same pan until the mushrooms brown. Add garlic 30 seconds.
  3. Stir in flour, then broth and Worcestershire. Simmer 3 minutes until slightly thick.
  4. Off a hard boil, stir in sour cream and return the beef just to warm. Serve over noodles with parsley.

Notes

Sirloin or ribeye stays tender because the cook is short. Stew meat wants a braise, not this pan.

Stroganoff, not stew

The beef is sliced and seared, then finished in sour cream. It is not a long braise.

Substitutions

Greek yogurt can replace sour cream if you do not boil it. Ground beef works for a weeknight version.

Mistakes to avoid

Boiling after the sour cream goes in makes it split. Keep the heat low.

Storage

Refrigerate 3 days. The sauce tightens. Loosen with a spoon of broth.

FAQ

Can I use ground beef?

Yes. Brown it, drain extra fat, and follow the same sauce.

Why did the sauce curdle?

It boiled after the sour cream. Warm it gently next time.

What noodles?

Egg noodles are the usual bed. Rice works if that is what you have.

Is this pot roast?

No. Pot roast is a whole braised roast on its own URL.
