Description

American goulash with beef and elbows. From Your Daily Hit.

Ingredients

Scale
  • 1 tablespoon oil
  • 1 onion, diced
  • 2 garlic cloves
  • 1 pound (454g) ground beef
  • 1 teaspoon kosher salt
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1 can (15 oz) tomato sauce
  • 1 can (14 oz) diced tomatoes
  • 2 cups (480ml) beef broth
  • 1 1/2 cups (150g) elbow macaroni
  • 1 cup shredded cheddar, optional

Instructions

  1. Cook onion in oil until soft. Add garlic and beef. Brown the beef and drain extra fat.
  2. Stir in salt, seasoning, paprika, tomato sauce, diced tomatoes, and broth. Bring to a simmer.
  3. Add dry elbows. Cover and simmer 14 to 16 minutes, stirring once, until the pasta is tender and the sauce is thick.
  4. Taste for salt. Stir in cheddar if you want it. Rest 5 minutes so it thickens.

Notes

This is the American one-pot, not Hungarian goulash with paprika and no pasta. Keep the elbows in the pot only as long as they need.

One pot, not a layered bake

Lasagna is sheets, cheese, and the oven. This stays in a single pot.

Substitutions

Macaroni can be another short pasta. Add a cup more broth if the shape is large.

Mistakes to avoid

A hard boil breaks the pasta and clouds the sauce. Keep it at a steady simmer.

Storage

Refrigerate 4 days. The pasta keeps drinking sauce. Add a splash of water to reheat.

FAQ

Is this Hungarian goulash?

No. Hungarian goulash is a paprika stew. This is the American pasta pot.

Can I use turkey?

Yes. Add a little oil so the pot does not scorch.

Cheese on top?

Optional. Cheddar is the weeknight finish, not a ricotta layer.

Why is it dry?

The pasta absorbed the broth. Stir in water or tomato sauce when you reheat.
