Ingredients

  • 4 chicken cutlets
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup (63g) flour
  • 2 eggs, beaten
  • 1 cup (60g) breadcrumbs
  • 1/2 cup (45g) grated parmesan
  • 3 tablespoons oil
  • 1 1/2 cups (360ml) marinara
  • 6 ounces (170g) mozzarella, sliced
  • Parsley

Instructions

  1. Heat the oven to 400°F (200°C). Season the cutlets. Dredge in flour, egg, then breadcrumbs mixed with parmesan.
  2. Brown in oil 3 minutes per side. Set them in a baking dish.
  3. Spoon marinara over each cutlet. Lay mozzarella on top.
  4. Bake 12 to 15 minutes until the cheese melts and the chicken is cooked through. Sprinkle parsley.

Notes

Pound thick breasts to about 1/2 inch so they cook with the cheese. Jarred marinara is fine if you like the salt level.
